Works well, but use different pasta recipeHave been working with this and found that the following dough works great:
(this is different from the standard KitchenAid recipe)
10 oz All purpose flour
2 large eggs (wt ~ 2 oz/egg)
4 large egg yolks
1 tsp Kosher Salt
0-1 tblspn water (depends on humidity of kitchen -cold here in Maine)
Mix in mixer the usual way (30 sec mix, 2-3 min with dough attachment)
Then knead for 2-3 minutes
Rest for 30 minutes-1 hour
Roll the dough on following settings:
Roll out on #1 with 3-4 folds (kneading)
Roll out on #2 with 3-4 folds (kneading)
Roll out on # 3
Roll out on #4
Run through Ravioli Maker:
Sprinkle with flour as needed
Fold dough in half and crease the fold.
Remove hopper, insert folded end and give it a quarter turn
Open folded pasta so that it is draped over both sides
Replace hopper
Then, SLOWLY, turn the crank.
Voila --works fine. Just be patient and be sure to knead the dough and let it rest before using this attachment.

Works perfectly wellGuys, don't rate your own inability. This attachment works perfectly well and produces gorgeous ravioli if you are capable to do a proper pasta dough. And nothing is easier than producing full-size sheets with the Pasta Roller attachment.

Worked like a charmI had put this on my wedding registry and when I read the mixed reviews I almost returned it. So I figured I would give it a shot and it worked like a charm. The thing I saw that people were complaining about was leaking ravioli.
To all the people that were complaining that it is a manual crank, who cares. It has to be a manual crank or you would have filling all over the place. By having it a manual crank you can make sure that you dont have anything leaking out anywhere.
my first run though ( a dry run w/o filling) I noticed that the dough didnt quite match up. So then with my second sheet of dough I i stretched it out slightly and check for sizing and it fit great and I didnt have any leaking ravioli

Made homemade raviolios and they turned out perfect.I got a ravioli make for a Christmas and i made about 100 raviolis and they turned out great. of course, i made a meat filling. It sealed them nicely. I haven't tried a cheese filling. i am looking for a good recipe for them. but I am totally satisfied with my product. Thank you Kitchenaid. Also my husband bought me the ohter three attachments for my mixer. to roll the dough out I also made spaghetti. they turned out great too.

Takes practiceI have used the ravioli maker twice. In short, it works well once you perfect the dough and your technique. You will NOT get perfect ravioli on your first try, so schedule a couple of "just for fun" sessions before trying to impress anyone. One thing I learned is the dough needs to be fairly thick or it won't seal between ravioli - 4 on the KA pasta press worked well. If you are going for that paper-thin style, better to make by hand. By the end of my second session I was competent making the cheese ravioli pictured here. With a little patience you will be able to do it too.

Very Slick AttachmentVery slick and effient way to make ravioli. Each pocket is about 1.25"x1.25 square for filling. When you fold your dough sheet in half, be sure to give your fold a nice pinch to creat a sharp crease. Then adjust the ravioli stamp/rollers so your creased edge will be outter edge of your first row of ravioli pockets. This is the key to getting the ravioli to pass through the bottom of the press without bunching up. Smooth sailing after you master this starting step.

practice practice practiceI love making pasta, and ravioli with the hand stamp was a headache to deal with. Took me a while to buy this since the reviews are literally split between love and hate! I decided to treat my self and I'm happy I did. First of all pasta must be rolled to number 3, the attachment will stretch the dough. Second : patience! Its a slow process, make sure not to overfill hopper, but then slowly turn the dial while pushing filling. My first time was OK, my second much better.
I don't give 5 stars just because I find it difficult to separate strands, but could be me not waiting for it to totally dry, but a pastry roller fixes the issue

Extremely Technique SensitiveWith a little practice I found I could crank out a dozen or more at a time much faster than I could by hand and there was no trapped air in the raviol.
At a roll out setting of 3 I found the pasta had a very chewy edge, unacceptably so. I am now experimenting with a roll out of 4 or 5.
The biggest problem I'm having is the pasta hanging up on the tines on the "thin white guides/levers" on the bottom of the machine. These are obviously meant to deflect the pasta off the rollers once sealing is complete instead my finished ravioli pass between the right roller (facing the free end of the machine) and the guide and scrunch up into a complete mess. I'm going to try dusting the rollers with flour as well as the surface of the pasta contacting them and see if that helps. The pasta consistently sticks to the right roller and does so regardless of how thick or thin the roll out.

Very finickyWhile I am a total fan of the KitchenAid attachments and have raved about the ice cream maker, meat grinder, sausage stuffer, pasta roller and various pasta cutters the ravioli maker was a disappointment. The raviolis are very small and the operation very finicky...overall I think it was easier to simply use the roller to make two sheets of pasta dough and hand finish them. Really not that great as tends to make messy side raviolis and they are too small for my taste much neater to fill them by hand and less waste.

2/5 ravioli make it outI’ve tried the roller time and again and it seems to end up a big mess every time. I’d say only 2/5 ravioli make it through. I’ve been quite disappointed in the product.

Good in theory...Generally, any Kitchenaid product is a safe bet; however, this is a miss. While it is built sturdy from a pure construction point of view, there is no wiggle room for the consistency of both the filling and the pasta. I make pasta on a near-weekly basis and have made ravioli many times. While the idea of a cranked sheet of ravioli is smart... traditional hand rolling, filling, and cutting is much faster and without near the mess. Nice in theory, a miss in practical terms.

Returned after first useI received this as a gift and I was so excited because I got a copy of my Nona’s recipe and couldn’t wait to use it. Well what a flop. After spending a lot of money for ingredients (nona’s recipe was for meat and some veggies) and almost ALL day getting everything prepared and ready to start the process it was so messy and you couldn’t even tell some were ravioli. Didn’t waste though I used all to make a delicious lasagna.
I will say though that I have almost every attachment and I will say I love the pasta maker. So save your money!! Sorry kitchen aid. Don’t bother with a response because I returned it to the store for a refund.

Very disappointed. Wanted this to work...I am an experienced cook and love my KitchenAid mixer. I have worked in restaurants and made lots of raviolis in my life. All I can say is that I tried... I made 3 different consistencies of dough and although they came out ok, I couldn't get the ends to properly seal. I did just purchase the pasta arm and I am hoping that maybe that will help... Any suggestions?

Just make them by hand and save your moneyI bought this attachment thinking I would be able to crank out huge quantities of ravioli with little effort, but what I found was that hand making them was similarly time consuming and more forgiving than using this attachment. I even took a ravioli making class that included a module that utilized the rollers to make sure I was making the dough correctly. In the course, I asked the instructor about using the ravioli maker and he told me the best way to use the ravioli attachment was to put it in the box on the highest shelf in the basement and use it as a dust collector. so thats where it will stay. Handmade raviolis are the way to go.

Not working as intendedThe ravioli don't come out neat. I have tried differnt ways of feeding the filling but it will always get some filling in between raviolis once you cook them the ravioli burst. As an owner of multiple Kitchenaid I was expecting much more from this attachement. Not worth the investment.

A waste of time, energy and momey. Hand crank them? Really?I tried many times to get this work, but I was wasting too much time in making the sheets (which needed to be the perfect width of the ravioli maker to have a chance at working), and cost of products to make this pasta. There needs to be a way to automatically feed in the filling making it more exact. Also, why have a mixer attachment if I have to turn it by hand instead of using the mixer's power to turn it? Returned it. If this was redesigned to fix its many flaws I would buy it again to give it another shot, until then I'll keep making by ravioli by hand.

No go!I was really excited to get this as a gift and try it as I love all the other attachements that I have. But sadly this fell short. So badly that it really needs to be reinvented. I couldn't find the right technique even with following the instructions! I ended up doing it by hand

Not worth the hassleFirst KitchenAid attachment I have found to be a total waste. I wanted this to work and LOVE all of the other pasta attachments which work fantastic but the ravioli attachment is a lot of work and I end up with a mess each time I have tried to use. I also have ended up hand making ravioli each time I have attempted to use my attachment. Will continue to use other KitchenAid attachments for my mixer and recommend their products but save your money and time on this one!

Not worth the moneyI have tried several times to use this attachment but I'm always disappointed. It just ends up an absolute mess and little to no filling gets into the pasta or my perfect pasta sheets turn into a glob when putting through the machine. I end up using my great pasta sheets that I make with the pasta roller and have to make the ravioli by hand - just laying them on top of each other and cutting them with a biscuit cutter. So much easier and actually works! This attachment is such a waste of money and it's a lot of money to spend for something that doesn't work.

Extra time, patience, trial and error neededI fully agree with the other negative reviews and had same issues. I will add that it also pulled the dough to one side on the roller. It also helped not having the plastic tines on the bottom engaged. You also end up with extra pasta at the top and bottom of the run. And, if you have some filling left in the hopper you need to take that out before putting new sheets in. Making them by hand is way more efficient, less futsy and frustrating.

Only bad product KA makesTerrible. I have tried different dough thicknesses, different doughs and no matter what, it eventually makes a huge mess with little yield. Do yourself a favor and make your ravioli by hand.

Very disappointedWas really excited to get this for my birthday as well as the pasta attachment. Unlike the pasta rolling attachment this one is VERY disappointing. It's messy, the pasta crumples up and doesn't feed through nicely and I get pasta with little to no filling. I've tried 4/5 times now changing my technique each time and even watched videos online to see what I'm doing wrong. Nothing seems to work so I just end up doing it by hand. Really sad about this as it costs so much money for something that isn't fit for purpose.

Waste of good lobster.Tried making ravioli. It was a pain trying to feed in the stuffing a little bit at a time, the dough kept tearing, and it made a big mess.
