Matcha and Red Bean Shave Ice

Ingredients
Sweet red beans (for garnish)
4 Tbsp. sweetened condensed milk (60 g, for garnish)
1/4 tsp. salt (1.9 g)
6 Tbsp. sugar (75 g)
Water (for sweet red bean paste)
1/2 cup azuki beans (103 g)
1 pinch kosher salt (0.9 g)
1 lemon (30 mL juice)
Honey (optional)
1 cup water (250 mL, for matcha syrup)
2 Tbsp. matcha powder (12 g)
4 plain water pucks
Step by step
Fill 4 molds with plain water. Freeze for 12 to 24 hours.
This can be made the day before. Combine 2 Tbsp. (12 g) matcha powder and 1/2 cup (125 mL) warm water in a small bowl and whisk. Add 1/2 cup (125 mL) cold water, honey to desired sweetness, lemon and whisk again until combined. Strain and refrigerate until cold.
Do this the day before. Rinse azuki beans and remove any broken pieces. Add 1/2 cup (103 g) azukis to a large pot and cover with water 2 inches above the beans. Turn heat on high. Bring water to a boil. Once boiling, discard the water and put azukis back into the same pot. Again, add water 2 inches above the beans. Bring the water to a boil over medium heat. Once boiling, bring heat down to medium low and simmer for 1 to 1 1/2 hours. Keep adding water if it evaporates so the beans stay submerged. After an hour, test the beans. They should have a silky-smooth texture. Keep boiling the full 1 1/2 hours if they are still crunchy. Drain azukis.
Put the azuki back into the same pot. Turn the heat to low. Add half the sugar. Mix, stirring constantly. Once dissolved, add the rest. Mix constantly until sugar is dissolved and add salt. Pour into a shallow casserole dish to quickly cool in the refrigerator.
This recipe does require tempering. Shave ice into a glass or bowl of your choice. Top with matcha syrup until it coats the ice. Garnish with a dollop of sweet red beans. Drizzle sweetened condensed milk over the top.
Tips: Shave ice is called Kakigori in Japan. Matcha is traditionally served with sweetened condensed milk, sweet rice balls, sweet red beans, and topped with ice cream. You can buy store bought sweet red beans if you do not want to make your own. You can also buy green tea ice cream and garnish with a scoop. Using yuzu in place of lemon is also a perfect match. Sweetened condensed milk can be enough sweetener for this dish. If you desire more sweetness, please add honey to the syrup.
