Ingredients
2 cups rolled oats
1/2 cup applesauce (and variety)
1 cup non-dairy milk + more for topping (optional)
1 1/2 cups water
1 1/2 teaspoons ground cinnamon, divided
1/2 cup brown sugar, divided
1 tablespoon coconut oil
2 medium apples, peeled + chopped (about 1 ½ cups)
Step by step
Peel, core and dice the apples.
Turn KitchenAid® Multi-Cooker on to the Sauté setting. Add coconut oil and once the Multi-Cooker is preheated, add the apples, 1/4 cup of sugar and 1/2 teaspoon of cinnamon. Turn the KitchenAid® Stir Tower on low, cover and cook for 5 minutes.
After 5 minutes, turn the Stir Tower off and remove 1/4 cup of the apple mixture.
Turn Multi-Cooker to Boil and add the water and non-dairy milk, bringing this mixture to a boil.
Once boiling, add oats, applesauce, and remaining cinnamon and sugar. Turn the KitchenAid® Stir Tower back on low, cover and cook for 5 minutes, or until the liquid has been absorbed.
Once cooked, serve oatmeal in small bowls. Top each with a bit of the apple mixture, a sprinkle of cinnamon and brown sugar (optional) and a drizzle of milk if you desire.
