Ingredients
1 frozen dragon fruit pouch
½ frozen banana, cut into 1-inch pieces
¼ cup chopped zucchini
½ cup frozen pineapple chunks
1 cup refrigerated unsweetened coconut milk
1 cup (140 grams) roasted unsalted cashews (crushed and cashew butter)
½ cup (40 grams) shredded coconut (flakes pulsed)
½ (50 grams) banana, peeled and sliced
½ cup (70 grams) strawberries, hulled and sliced
1 tablespoon (14 grams) chia seed
Step by step
To jar of KitchenAid® Cordless Go Personal Blender add dragon fruit, banana, zucchini, pineapple, and coconut milk. Twist on lid and attach to blender base. Run 1-2 cycles to get desired smooth consistency. Pour into bowl.
To make cashew toppings, add coconut to KitchenAid® Cordless Go Top Down Chopper. Pulse to chop. Set aside coconut and use new bowl to process cashews. Add cashews and pulse to chop.
Remove a couple tablespoons of chopped cashews and set aside. Continue to process remaining cashews until cashew butter forms.
To assemble smoothie bowl, add sliced fruit and chia seeds to smoothie in bowl. Sprinkle with chopped cashews and coconut. Drizzle with cashew butter.
Pro Tip: Store remaining cashew butter in the refrigerator and use on toast or as a dip for apples!
