Ingredients
Key lime (or lime, cut into slices)
1 tablespoon vanilla extract
1/2 cup confectioners' sugar
2 cups heavy whipping cream
2 graham cracker crusts (9 inches)
1 1/4 cups Key lime juice (or lime juice)
6 tablespoons grated lime zest (from Key limes or regular limes)
2 cans sweetened condensed milk (14 oz. per can)
3 large egg yolks
1 package cream cheese (8 oz. per package, softened)
Step by step
Preheat oven to 325°F. In a KitchenAid Stand Mixer using Flat Beater Accessory, beat cream cheese until smooth. Beat in egg yolks. Beat in sweetened condensed milk, lime zest and lime juice. Pour into crusts.
Place pies on a baking sheet. Bake until centers are almost set, 22-25 minutes. Cool completely on a wire rack.
Cover and refrigerate until chilled, 3 hours or overnight.
For topping, in a clean bowl of a KitchenAid Stand Mixer using the Wire Whip Accessory, beat whipping cream, confectioners’ sugar and vanilla until stiff peaks form; pipe or spread over pies.
Garnish with lime slices and, if desired, additional lime zest.
