Spicy Pork Tenderloin with Avocado & Lime
Ingredients
½ tsp. sea salt
1 tsp. red pepper flakes
1 tsp. chili powder
2 tsp. cumin
¼ cup fresh lime juice
Zest of 1 lime
3 cloves garlic, chopped
2 tsp. olive oil
4 limes, cut in half
4 avocados, peeled, pitted and cut in half
¼ cup olive oil
2 pork tenderloins, about 1½ lbs.
Step by step
Combine all ingredients in 9" x 13" pan.
Add pork to Marinade and turn to coat. Refrigerate 4 hours, up to overnight.
Remove pork from refrigerator and let sit at room temperature for 30 minutes.
Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to Medium High heat setting.
Remove tenderloins from marinade and place on Grill. Grill 20-25 minutes, turning once halfway through, until internal temperature reaches 160°F. Remove from Grill and let rest for 15 minutes.
Brush avocado and limes with oil; grill 10 minutes. Remove from Grill and serve with sliced pork.
