Seared Scallops with Preserved Lemon Relish
Ingredients
3 Tbsp. olive oil
1 Tbsp. lemon juice
1 Tbsp. cilantro, chopped
1 Tbsp. shallot, chopped
3 Tbsp. salted preserved lemons, chopped
2 Tbsp. olive oil
2 Tbsp. butter
1 lb. sea scallops
Step by step
Place the Smart Oven+ Baking Stone Attachment in oven. Select STONE BAKE mode and preheat to 425°F.
Combine all ingredients and set aside.
Dry scallops completely with paper towels. Melt butter and combine it with olive oil. Pour onto Baking Stone and let heat for 2-3 minutes. Arrange scallops on Baking Stone and sear 8-10 minutes, turning halfway through. Do not move scallops until time to turn.
Remove scallops from Baking Stone and serve immediately with Preserved Lemon Relish.
