Ingredients
3 ounces (85 g) sliced brie cheese, divided
¼ cup (50 ml) cooked crumbled bacon (about 4 slices)
1 (48 g) egg, lightly beaten
2 tablespoon (30 ml) dark brown sugar
1 (216 g) green apple,sliced
1 tablespoon (15 ml) unsalted butter
6 tablespoons (90 ml) cold water
¼ cup (50 ml) cold unsalted butter, cut into small pieces
1 pinch kosher salt
1 tablespoon (15 ml) granulated sugar
1 cup (250 ml) all-purpose flour
Step by step
Add flour, granulated sugar and salt to bowl of KitchenAid® Artisan Mini Stand Mixer. Attach bowl and Flat Beater to mixer. Turn to Speed 1 and mix 1 minute or until combined. Add butter and beat on Speed 4 until mixture appears sandy with small lumps of butter. Stop and scrape bowl. Add water. Turn to Speed 2 and mix until dough comes together.
Preheat oven to 375°F.
Melt butter in 12-inch sauté pan over medium-high heat. Add apples and brown sugar; sauté 6 minutes or liquid evaporates and apples are lightly browned. Cool.
Transfer dough to floured work surface. Lightly dust dough or rolling pin with flour, then roll dough to approximately 1/8 inch thick. Using 5-1/2-inch round cutter, cut out 4 circles. Brush each circle with egg. Fill each with one fourth of the apple mixture, 1 tablespoon bacon and one fourth of the cheese. Fold dough over filling to create half-moon shape. Seal edges with fork and brush top with additional egg. Transfer to baking sheet lined with parchment paper.
Bake 20 minutes or until golden brown. Cool before serving.
