Pineapple, Orange, and Guava (POG) Shave Ice

Ingredients
4 Tbsp. sweetened condensed milk (60 mL, for garnish)
1 Tbsp. sugar (12.5 g, for coating guava paste)
4 oz. of guava paste (112 g)
4 scoops vanilla ice cream (2 oz. or 220 g per scoop, optional but recommended)
1 pinch kosher salt (0.9 g)
1 lemon (30 mL juice)
1/2 cup white sugar (130 g)
1/2 cup water (125 mL)
1/2 cup orange juice (125 mL, pulp-free, no sugar added, fresh or bottled)
1/2 cup guava (125 mL guava nectar)
3 1/2 cups pineapple (613 g, chopped, divided)
4 blocks ice (plain water molds)
Step by step
Fill 4 ice molds to the fill line with plain water and freeze for 12 to 24 hours.
This can be done the day before. Cook 2 1/2 cups (525 g) chopped pineapple, 1/2 cup (125 mL) guava nectar, 1/2 cup (125 mL) orange juice, 1/2 cup (130 g) sugar, juice of 1 lemon (30 mL) and a pinch of salt over medium heat for about 15 minutes or until pineapple is softened; puree in blender making sure to cover the top so the hot sugar liquid does not splash. Strain the syrup and refrigerate until chilled, about 2 hours.
Finely chop the remaining 1 cup (88 g) of pineapple. Set in the refrigerator.
Open guava paste and cut 4 oz. (112 g) of the paste into small, diced chunks. Put guava dice into a bowl and sprinkle 1 Tbsp. (12.5 g) sugar over the guava to coat them.
Divide vanilla ice cream scoops into 4 serving cups or bowls. This recipe does need 10 minutes of tempering. Shave the ice over the ice cream and top with syrup until you see the color reach the ice cream at the bottom and garnish with the chopped pineapple, guava candy and about 1 Tbsp. (15 g) or less of sweetened condensed milk depending on how sweet you like your shaved ice.
Tips: You can use no sugar added pineapple juice if you don’t want to make fresh. Generally, if the ice is too tightly packed the syrup will not penetrate through to the bottom. You can use a fork to poke holes through the top so that the syrup can coat all the ice. If syrup is not penetrating the ice, you can also thin it out with 1 tsp. at a time of cold water.
