Ingredients
Maple syrup, for serving
1/4 teaspoon ground cinnamon
1/3 cup granulated sugar
Juice of 1 large orange
Zest of 1 large orange
2 cups cranberries, fresh or frozen
1 teaspoon vanilla extract
1/4 cup canola oil or vegetable oil
2 large eggs
2 cups buttermilk
1 teaspoon orange zest
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 tablespoons granulated sugar
2 cups all-purpose flour
Step by step
Heat the griddle of the KitchenAid® 6 Burner Gas Rangetop to 350° F.
Make the cranberry orange compote. In a small saucepan from the KitchenAid® 7-Ply Stainless Steel 10-Piece Set, combine the cranberries, orange zest, orange juice, and sugar. Heat over medium heat until the sauce thickens and some of the berries burst, about 10 to 15 minutes. Remove from heat and stir in the cinnamon.
To make the pancakes, whisk together flour, sugar, baking powder, soda, salt, and orange zest in a large bowl.
In a small bowl, whisk together buttermilk, eggs, oil, and vanilla extract. Add wet ingredients to the dry ingredients and stir just until combined. Don’t over mix. The batter needs to be slightly lumpy.
Coat the griddle of the Gas Rangetop with cooking spray. Drop 1/3 cup of batter onto the hot griddle. Cook on the first side until bubbles begin to form, about 3 minutes. Carefully flip pancake over and cook for another 3 minutes or until golden brown. Continue this process until pancake batter is gone.
Serve the pancakes warm with cranberry orange compote and maple syrup.
