5 cups (600 g) all-purpose flour
1 teaspoon salt
1-½ teaspoons cracked black pepper
1 cup (250 ml) water
2 cups (116 g) shredded Parmesan cheese
½ cup (125 ml) olive oil
½ cup (113 g) salted butter, softened
Step by step
Add butter and oil to Bowl of KitchenAid® Artisan Stand Mixer. Attach Bowl and Paddle to Mixer. Turn to Speed 3 and mix 2 minutes. Stop Mixer and add cheese, water, pepper and salt. Turn to Speed 3 and mix until combined.
Turn to Stir and add flour gradually. Turn to Speed 4 and mix 2 minutes. Dough will be slightly crumbly. Shape into disc and wrap tightly in plastic. Let stand at least 2 hours.
Preheat oven to 325°F. Roll out one third of dough to 1/8-inch thickness on lightly floured surface. Brush dough lightly with olive oil and sprinkle with sea salt. Cut into 1-inch circles using round cutter or cut into squares using pizza cutter. Transfer to parchment paper-lined baking sheet. Repeat with remaining dough.
Bake 12 to 15 minutes or golden brown and crisp.
