Ingredients
1/4 cup melted butter (57 g)
1/2 cup heavy cream (118 mL)
1/2 cup milk (118 mL)
2 eggs (100 g, room temperature)
1/2 teaspoon salt (3 g)
1 teaspoon baking powder (4 g)
1 cup flour (120 g)
2 large russet potatoes (584 g)
Step by step
SPECIAL EQUIPMENT: KitchenAid® Artisan Stand Mixer with paddle attachment; pastry brush
Prepare the potatoes. Peel the potatoes and cut them into 2-inch chunks. Boil them in plain water until fork tender (about 15 minutes). Drain the potatoes and set aside to slightly cool.
In a small bowl mix the flour, baking powder and salt. Set aside.
Add 2 cups of softened potatoes, eggs, milk and cream into the bowl of the KitchenAid® Artisan Stand Mixer. Attach the paddle attachment. Whip the mixture on speed 4 until potatoes are mashed and all ingredients smooth (about 45 seconds). Then, turn to Stir setting (or speed 1), add in the flour mixture, and mix just until incorporated.
Heat your waffle iron per manufacturer instructions. When hot, generously brush butter into all cavities of the waffle iron. Then, ladle about 1/4-⅓ cup of waffle batter into each cavity and smooth the batter to 1/2” of each edge. (Be careful not to make the batter too thick or it will push out the sides when you close the iron - but also not so thin you can see through the batter layer.) Bake the waffles in the iron until golden brown.
Gently separate the waffle seams with a spatula before removing the waffles so you have clean edges. Set the waffles on a cooling rack set over a sheet pan and keep them in a warm oven while you cook the remainder of the batter.
Serve immediately.
CHEF’S NOTES: If you place the warm waffles on a flat surface the bottoms will get soggy. So, placing them on a cooling rack over a sheet pan keeps both top and bottom crispy while you wait to serve them. These waffles can be served with savory or sweet toppings. Get creative! Some suggested toppings include: Nutella and crushed hazelnuts; peanut butter and bananas; cream cheese, salmon lox and capers; avocado slices, feta cheese, salt, pepper, lime juice and a drizzle of olive oil; cottage cheese and fresh fruit; and cheddar cheese, fried egg, and bacon pieces. You can also use leftover mashed potatoes for these waffles instead of boiling potatoes.
