Ingredients

1 cup semisweet chocolate chips (optional)

1 1/2 cups chopped walnuts (optional)

1 teaspoon vanilla extract

1 tablespoon cold water

1 teaspoon baking soda

1 teaspoon salt

1 cup all-purpose flour

1 cup sugar

1/2 cup coconut oil

3 large eggs

3 medium bananas (ripe)

Step by step

  1. Preheat oven to 350°F. Grease and flour a 9x5-inch loaf pan.

  2. Add bananas and eggs to a KitchenAid Blender. Cover and process until smooth.

  3. In a KitchenAid Stand Mixer using the Flat Beater Accessory, beat oil and sugar until light and fluffy, 3-5 minutes. Combine flour, salt and baking soda; gradually beat into sugar mixture. Beat in banana mixture. Beat in water and vanilla. If desired, stir in nuts and chips. Pour into prepared pan.

  4. Bake until a toothpick inserted in center comes out clean, 55-60 minutes. Cool in pan 10 minutes before removing to a wire rack.
