Humble Sweet Banana Loaf

One of the things I love most about the new KitchenAid® Artisan® Mini Mixer is how easy it makes putting together one of my favourite afternoon tea-time treats; the humble sweet banana loaf! With 3pm emails on the go and a craving for something sweet, I can whizz up this indulgent recipe in just over an hour (which, let’s be honest, is pretty much solely for the cooking time anyway), whilst busying myself with other life-admin (and knowing they’ll be a delicious bake at the end of it)! The mixer can get on with the hard work quietly whilst I finish some of the boring stuff, plus mixes everything perfectly to create the most fluffy, light loaf. If that's not dreamy, I don't know what is!

Ingredients

1 teaspoon ground cinnamon

30 g caster sugar

2 tablespoons milk

2 eggs at room temperature

1 teaspoon baking powder

100 g unsalted butter

2 mashed ripe bananas

160 g caster sugar

1 tsp ground cinnamon

225 g self raising flour

Step by step

  1. Preheat your oven to 180 degrees Celsius (fan assisted), before mixing up your cinnamon sugar. Grease and line a loaf tin, and sprinkle the cinnamon sugar inside- saving a little for the top of your loaf too (which gives it a delicious crunch).

  2. Measure out all of your ingredients, before putting them all into your KitchenAid® Artisan® Mini Mixer. Start slowing, and mix for around 3 minutes- until everything is smooth and well combined.

  3. Scoop your mixture into your prepared loaf tin, sprinkling the last of the cinnamon sugar on top- before popping into the oven for around an hour (checking around the 55 minute mark)!

  4. Finally, remove your loaf from the oven and cool. Enjoy with a cup of tea to battle the 4pm lul!
