Homemade Butter
Ingredients
1 quart heavy whipping cream
Step by step
In a large bowl of a KitchenAid stand mixer using a whisk attachment, beat cream on high until cream separates into butter and liquid, about 10 minutes.
Toward the end of separating, slow mixer 1 level at a time. This will help pick up all the small pieces of butter remaining in the liquid.
Strain through cheesecloth. Discard liquid or save for another use. Place butter into colander; rinse gently with water. Drain well.
Cover and refrigerate.
General Tips: Create a compound butter by beating in your favorite herbs or spices. Try garlic and basil, lemon zest and thyme, jalapeno and lime, cilantro and ginger, cinnamon and sugar or maple and nutmeg.
Preparation Tips: Attach the Splash Guard to your stand mixer when making this butter. The cream will splatter quite a bit before it becomes more solid. Keep a dish towel on hand to cover the pouring spout if the cream splashes out.
