Ingredients

2 teaspoons goat cheese (optional*)

1 tablespoon chopped pecans

Salt and pepper to taste

Salt and pepper to taste

1 teaspoon grated fresh ginger

1 teaspoon maple syrup or other sweetener

2 tablespoons olive or pecan oil

1 tablespoon lemon juice

2 medium gold beets, washed and trimmed

Step by step

  1. Whisk the vinaigrette ingredients. Set aside.

  2. Prep and spiralize the beets using your KitchenAid® Stand Mixer fitted with the Spiralizer Attachment using the peeler and fine spiralizing blades.

  3. Toss the beet noodles with the vinaigrette. Marinate for a few minutes to allow the flavors to penetrate the beets. Enjoy as is or top with goat cheese, pecans and herbs.

  4. * Skip the goat cheese to keep the salad vegan.
