Ingredients

½ tsp. sea salt
6 Tbsp. sugar
8 egg yolks
2 oz. unsweetened chocolate, chopped
6 oz. bittersweet chocolate, chopped
2 tsp. espresso powder
½ tsp. sea salt
1 cup whole milk
3 cups heavy cream
Step by step
Set the Smart Oven+ Attachment base pan with heating element and Steamer Water Basin Pan on the oven rack. Add 4 cups of water to Water Basin Pan and set Perforated Steamer Tray in place. Cover with Lid.
Select STEAM Mode on oven and preheat the Steamer for 10 minutes.
Combine milk and heavy cream in large saucepan. Bring to a simmer over medium heat. Remove from heat and whisk in salt, espresso powder and both chocolates. Whisk until chocolate is melted.
Combine egg yolks and sugar in medium bowl. Whisk to combine. Slowly add chocolate to eggs, stirring constantly.
Pour cream into 4 oz. ramekins or espresso cups. Cover the ramekins with foil and place them on the Perforated Steamer Tray. Steam for 25-30 minutes until set.
Remove ramekins from Steamer. Top with whipped cream (optional) and serve immediately.
