Ingredients
1 tablespoon olive oil
2 1/2 pound boneless pork loin roast
3 sprigs fresh rosemary
1/8 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon freshly ground black pepper
1 teaspoon kosher salt
2 garlic cloves, minced
1 tablespoon Dijon-style mustard
1 tablespoon apple cider vinegar
1/4 cup maple syrup
1 cup strong coffee, at room temperature
Step by step
Make the coffee in a KitchenAid® Personal Coffee Maker and set aside to cool to room temperature. Once cooled, place the coffee, maple syrup, mustard, garlic, salt, pepper, ginger, cinnamon, rosemary, and pork in a 1-gallon zip top bag or other large resealable container and shake to combine. Place in the refrigerator and marinate for 8 hours, or overnight.
Preheat the oven to 400°F.
In a large ovenproof skillet, heat the oil over medium-high heat. Add the pork loin, discarding any leftover marinade, and sear until golden brown on all sides, about 2 to 3 minutes per side. Transfer the pan to the oven and roast for about 40 to 50 minutes, or until a thermometer inserted into the center of the meat registers 145°F.
Let rest for 10 minutes. Slice the pork into 1/2-inch thick pieces. Serve.
