Carrot Cilantro Sesame Salad

Ingredients

Sea salt (to taste)

2 tablespoons toasted black sesame seeds

1 medium orange (zested)

1 cup fresh mint leaves (firmly packed)

1 cup cilantro leaves (firmly packed)

8 medium carrots (spiralized with the stand mixer attachment; 8 cups)

1 teaspoon coconut sugar (or cane sugar)

2 teaspoons minced garlic

1 tablespoon minced shallots

2 tablespoons minced fresh ginger

2 tablespoons fresh lemon juice

2 tablespoons toasted sesame oil

2 tablespoon wheat-free tamari

3 tablespoons rice vinegar

1/3 cup safflower oil

2/3 cup freshly squeezed orange juice

1 teaspoon finely grated orange zest

Step by step

  1. To make the dressing, pour all of the ingredients (1 tsp orange zest, orange juice, safflower oil, rice vinegar, wheat-free tamari, toasted sesame oil, fresh lemon juice, minced ginger, minced shallots, minced garlic, coconut sugar) into your KitchenAid® blender and puree on high for 30 to 60 seconds until the ingredients are pulverized and the mixture is emulsified.

  2. In a large salad bowl, gently toss the spiralized carrot, cilantro, mint, orange zest from 1 medium orange and sesame seeds.

  3. Pour the dressing over the salad, and toss so that the ingredients are evenly coated.

  4. Season with salt to taste.
