Butter Cake with Whipped Cream & Seasonal Berries
Ingredients
1 cup sugar
Half pint whipping cream
2 teaspoons vanilla
2 tablespoons water
3/4 cup granulated sugar
1/3 cup butter
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 cups all purpose flour
1 cup buttermilk
1 tablespoon vanilla
4 eggs
2 cups granulated sugar
1 cup butter, room temperature
Step by step
Preheat the oven to 325 degrees F. Grease a KitchenAid® Nonstick Round Cake Pan with cooking spray or butter. Secure the flat beater attachment to your Stand Mixer. Add the ingredients and mix on low for 30 seconds, and then mix on medium for 3 minutes until there are no lumps.
Preheat the oven to 325 degrees F. Grease a KitchenAid® Stand Mixer with cooking spray or butter. Secure the flat beater attachment to your Stand Mixer. Add all of the ingredients above. Mix on low for 30 seconds, and then mix on medium for 3 minutes until there are no lumps.
Using a spatula, scoop out the batter into the greased pan. Bake in a KitchenAid® Convection Digital Countertop Oven for about 65 minutes or until a toothpick inserted into the center comes out clean. Allow cake to cool slightly before inverting it onto a cake stand.
Secure the whisk attachment to a Stand Mixer. Add both ingredients to the Stand Mixer. Mix on medium or high until stiff peaks form.
Using a spatula, spread whipped cream over the top of the cake. Top with berries of your choosing. Serve immediately.
