Sweet Potato Bisque


  • Makes 4 servings

  • 1 pound sweet potatoes, peeled and cut into 2-inch pieces
  • 1/4 cup water, plus additional for cooking potatoes, divided
  • 1 tablespoon butter
  • 1/2 cup finely chopped onion
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 2/3 cup unsweetened apple juice
  • 1 cup buttermilk
  • Chopped fresh chives (optional)


  1. 1. Place sweet potatoes in large saucepan; add enough water to cover. Bring to a boil over high heat. Cook 15 minutes or until potatoes are fork-tender. Drain; cool under cold running water.
  2. 2. Meanwhile, melt butter in small saucepan over medium heat. Add onion; sauté 2 minutes. Stir in curry powder, coriander and salt; sauté 1 minute or until onion is tender. Remove from heat; stir in apple juice.
  3. 3. Place sweet potatoes, buttermilk and onion mixture in pitcher of KitchenAid® Torrent™ Blender. Cover and blend on Soups/Sauces setting. Return to saucepan; stir in remaining 1/4 cup water. Cook over medium-low heat until heated through. Garnish with chives.
