Spinach and Artichoke Dip

Ingredients

  • 1 12oz bag of thawed frozen spinach, excess water drained
  • 2 cloves garlic
  • 2 cups canned artichoke hearts, drained
  • 2 tablespoons fresh squeezed lemon juice
  • 1 cup grated parmesan cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 8 oz cream cheese, room temperature
  • 2 teaspoons red pepper flakes
  • 1 teaspoon Chipotle Tabasco Sauce (can substitue regular Tabasco sauce)
  • Salt and pepper to taste

Instructions

  1. 1. With the Torrent Blender running, drop 2 cloves of garlic through the ingredient feed to mince finely.
  2. 2. Add remaining ingredients, except spinach, to pitcher and blend at variable speed for 1 minute until smooth .
  3. 3. Place the blended mixture in a medium size bowl. Add the spinach and stir to combine.
  4. 4. Place the Spinach Artichoke Dip in a 2 qt. baking dish that has been sprayed with vegetable spray.
  5. 5. Bake at 400 degrees for 15-25 minutes, until bubbling. Serve immediately with crackers or bread.
