Romaine Apple and Pecan Salad


  • Makes 8 servings

  • 3 romaine hearts, washed and torn
  • 3 medium Granny Smith apples, cored and cubed
  • 1/2 cup pecan pieces
  • 1/4 cup cranberries
  • 1/2 cup olive oil
  • 1/3 cup white wine vinegar
  • 2 cloves garlic
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste


  1. 1. Place romaine in a large bowl. Add the apples, pecans and cranberries. Toss to combine.
  2. 2. Place the olive oil, vinegar, mustard and salt and pepper in the blender. Blend on low until the dressing looks creamy.
  3. 3. Toss the salad with the dressing and serve.
