How To Make Fideo: Recipe and Tips

The first step to a delicious sopa de fideo recipe is to toast the fideo which requires dried pasta. You should plan to create the pasta 24 hours before you plan to serve your meal to give it time to dry.

Step 1: Make the pasta dough

Add flour to your stand mixer bowl, then crack the eggs in the center of the flour and add salt. Attach the Flat Beater to your stand mixer and mix until the ingredients have fully combined. 

 

Once your dough is mixed, attach the Dough Hook and knead until the dough forms a ball. Let the pasta dough rest for 30 minutes.

Step 2: Roll and cut the pasta

After you have let your ball of dough rest for 30 minutes, divide the ball into four sections. Attach the Pasta Roller Attachment and turn your stand mixer on to speed 2. Flatten each section of dough with your hands before feeding it through the pasta roller at least 3 times, folding it in half between each roll. 

Swap the Roller for the capellini cutter and feed each sheet of pasta dough through to create the thin strands sopa de fideo is known for. Cut the pasta into short pieces, then  toss the strands with a small amount of flour. Lay the strands of pasta in a single layer on a baking sheet or clean cloth towel to dry for 12–24 hours until it is dry enough to toast.

Step 3: Prep ingredients and toast pasta

Add oil to your pan and heat on medium, then add your fideo to the pot. Toast the pasta in the oil for about five minutes while stirring constantly to avoid scorching. Dice the garlic and white onions to prep for the soup.

Step 4: Add the rest of your ingredients to the pot

Add in the water, tomato sauce, garlic, onions and seasonings to the pot of noodles and stir. Bring the mixture to a boil, then reduce the heat and let the soup simmer for 25 minutes or until the ingredients have come together and thickened. Serve the soup and add toppings like avocado, shredded cheese or sliced green onion.

Fideo is a thin pasta that is used in Mexican, Spanish and Tex-Mex recipes. The thickness of fideo closely resembles a spaghetti or capellini noodle, but it is typically shorter in length.
