Tamarind Pineapple Shave Ice

Ingredients

candy (tamarind candy spoon or straw, optional)

4 Tbsp. sweetened condensed coconut milk (60 mL, or make your own with 1-11.25 oz. (320 g) can of coconut milk and 4 Tbsp. (50 g) of sugar))

1 pinch kosher salt (0.9 g)

1 lime (30 mL juice)

3/4 cup white sugar (185 g)

2 1/2 cups pineapple (438 g, peeled and chopped, ripe)

1 1/2 cups water (375 mL)

8 Tbsp. tamarind concentrate (120 mL, liquid concentrate)

4 blocks ice (plain water pucks)

Step by step

  1. Fill 4 ice molds to the fill line with plain water and freeze for 12 to 24 hours.

  2. In a saucepan, combine 8 Tbsp. (120 mL) liquid tamarind concentrate, 1 1/2 cups (375 mL) water, 2 1/2 cups (438 g) chopped pineapple, juice of 1 lime and a pinch of salt.

  3. Simmer over medium heat for 15 minutes or until syrupy; puree. Strain and refrigerate until chilled, about 2 hours.

  4. This recipe does need tempering. Shake your syrup before use and add a little cold water if the syrup has thickened too much. Shave your ice into your cup or bowl. Top it with your pineapple tamarind syrup until it coats the ice. Garnish with a drizzle of sweetened condensed coconut milk and top with a tamarind candy spoon.

  5. If you cannot find sweetened condensed coconut milk, you can make your own by simmering in a saucepan 1 can of coconut milk and 4 Tbsp. (50 g) of sugar on low for 1 hour and 15 minutes. Remember to stir frequently all the way to the end and cool down completely before using.

  6. Tips: Tamarind candy spoons are a jellylike Mexican candy called “cucharitas” or “little spoons.” The candy will slowly dissolve as you eat the shave ice. It is optional if you cannot find them. There are lots of tamarind candy treats you can find. Customize it however you want! You can use sweetened condensed milk instead of coconut. They are interchangeable. You can use fresh tamarind pulp. Use approximately 4 oz. pulp to 1 cup water.
