Ingredients

6 oz. halloumi, sliced

2 Tbsp. pumpkin seeds

2 Tbsp. fresh mint, chopped

Pinch cayenne

Juice from ½ lime

1 Tbsp. honey

¼ cup grapeseed oil

1 small seedless watermelon, cut into quarters

Step by step

  1. Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to High heat setting.

  2. Combine oil, honey, lime juice, cayenne and chopped mint in small bowl. Set dressing aside.

  3. Slice halloumi into ¼-inch slices. Arrange on Grill and cook 3-4 minutes per side. Remove from Grill and arrange on platter with watermelon. Drizzle with dressing and sprinkle with pumpkin seeds. Serve immediately.
