Ingredients
10 ounces dark chocolate (60%)
1 cup heavy whipping cream
1/3 cup sweetened cocoa
1 cup finely chopped nuts or other small candies
Step by step
Attach heated bowl and beater to mixer. Set heat to 220°F. After preheat, add cream to bowl and heat for 5 to 6 minutes. Add butter and melt for 1 to 2 minutes. Add chocolate and melt for 3 to 4 minutes. Turn to Stir speed and mix until all ingredients are completely melted and smooth. Add vanilla and blend on Stir speed for an additional 10 to 15 seconds. Turn heated bowl off.
Transfer mixture to shallow bowl and allow to cool, stirring occasionally. When cool, cover and refrigerate until firm, about 1 to 2 hours.
To make truffles, scoop chocolate mixture with a melon baller and quickly roll to form 1-inch balls. Roll in cocoa, nuts or candy, or dip in tempered chocolate. Place finished candies on parchment-lined tray and refrigerate until ready to serve.
Yield: About 20 truffles
