Cauliflower Soup

Ingredients

  • Makes 4 to 6 servings

  • 1/4 cup (1/2 stick) butter
  • 4 cups grated carrots (about 1 pound)
  • 1 cup finely chopped onion
  • 3 cups vegetable or chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons ground cumin
  • 1 clove garlic, crushed
  • 2 tablespoons finely chopped fresh cilantro
  • Salt and freshly ground black pepper

Instructions

  1. 1. Melt butter in medium saucepan over medium-high heat. Add carrots and onion; sauté 5 minutes or until softened. Add broth, lemon juice, ground coriander, cumin and garlic. Bring to a boil over high heat. Reduce heat to low; cover and simmer 25 to 30 minutes.
  2. 2. Transfer soup to pitcher of KitchenAid® Torrent™ Blender. Cover and blend on Soups/Sauces setting. Stir in cilantro and season with salt and pepper.
