Roasted Red Pepper Hummus

Ingredients

  • Makes 2 cups

  • 1/2 cup Tahini, stirred
  • 1 tablespoons extra virgin olive oil
  • Lemon zest from one lemon
  • 4 tablespoons fresh lemon juice
  • 1/4 cup water
  • 1 14oz can chickpeas or garbanzo beans, drained and rinsed
  • 2 cloves garlic
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cumin (optional)
  • Pinch ground cloves
  • Pinch white pepper
  • Pinch cayenne pepper
  • 3 tablespoons-1/4 cup roasted red peppers

Instructions

  1. 1. In a separate bowl, whisk together the Tahini and the olive oil and set aside.
  2. 2. Blend rest of ingredients on medium-high Variable Speed for about 45-60 seconds to get mixture silky smooth.
  3. 3. Pour the Tahini and olive oil mixture through the ingreident feed while blender is running. Blend until smooth, about 30 seconds.
  4. 4. Add roasted red peppers through ingredient feed, blend until creamy.
  5. 5. Serve with pita bread or vegetables.
