Pizza with Golden Raisins, Fresh Mozzarella and Pine Nuts

Ingredients

  • Makes 4 servings

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon active dry yeast
  • 1 teaspoon salt, divided
  • 3/4 cup warm water
  • 2 cloves garlic
  • 1 can (about 12 ounces) whole tomatoes, drained
  • 6 fresh basil leaves
  • 1 teaspoon chopped fresh oregano
  • 1/4 teaspoon red pepper flakes
  • Cornmeal
  • 8 ounces fresh mozzarella, sliced 1/4 inch thick
  • 1/4 cup golden raisins
  • 2 tablespoons pine nuts

Instructions

  1. 1. For dough, combine fl our, yeast and 1⁄2 teaspoon salt in medium bowl. Whisk to combine. Stir in water and mix until combined. Knead dough on fl oured surface 1 minute. Return to bowl; cover and let rise 2 to 3 hours.
  2. 2. For sauce, place garlic in KitchenAid® Diamond Blender. Pulse on speed 3 (Chop) 3 to 4 times. Add tomatoes, basil, oregano, red pepper fl akes and remaining 1⁄2 teaspoon salt; pulse on speed 3 (Chop) 4 to 5 times.
  3. 3. Preheat oven to 450°F. Sprinkle baking pan with cornmeal.
  4. 4. Shape dough into 10- to 12-inch disk on generously fl oured surface. Place dough on prepared baking pan. Top dough with 1 cup sauce, fresh mozzarella, raisins and pine nuts. Bake 10 to 12 minutes or until crust is browned and cheese is melted.
