Gazpacho

Ingredients

  • Makes 4-6 servings

  • 1 14.5oz can Muir Glen Organic “Fire Roasted” canned tomatoes
  • 1 cup of chopped Persian/English cucumber
  • ½ cup of green pepper, rough chopped
  • ½ cup red pepper, rough chopped
  • ¼ cup red onion, rough chopped
  • ½ cup celery, rough chopped
  • 1 clove garlic, rough chopped
  • 1 13.5oz can chicken or vegetable broth
  • 2 tablespoons lemon juice
  • 3 teaspoons Sherry vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon fresh ground pepper
  • 1 teaspoon Tabasco or Chipotle Tabasco sauce

Instructions

  1. 1. Place all ingredients in torrent blender pitcher. Blend on Soups/Sauves setting until ingredients are mixed and chopped small (about 45 seconds).
  2. 2. Chill in refrigerator for 6 hours or overnight for the flavors to develop.
  3. 3. Pour into serving bowls, garnish with a lime wedge or cooked chill shrimp if desired.
